I do not think anyone who are inclined towards sweet would
like to deny having rice kheer even in the middle of night. The taste of rice
kheer is that tasty and enjoyable. If you have attended a wedding or any such
function in South India, you would be knowing its importance as it is present
in almost all the wedding or functions. When I started cooking, I wanted to
learn to make some famous sweet which everyone likes but the problem was, as I
was a beginner I needed some easy recipe and rice kheer was the answer for this
difficulty.
Ingredients
required:
- ΒΌ cup basmati rice
- 1 litre full fat organic milk
- Sugar as required
- 4 powered cardamoms
- Saffron (a pinch)
- Sliced almonds
- Cashews (some 15)
- 1 tsp raisins
Method of making:
1. Rinse the rice well and then soak
it well for 45 mins.
2. Boil the milk in a heater and then
add the rice to it after draining the water from rice completely.
3. Stir the milk with rice in a low
flame and allow the rice to get cooked here.
4. After the rice is cooked, add
sugar to it and mix well and see to it that no lumps are formed.
5. Meanwhile take almonds in a
trough and heat it in a microwave by immersing the almonds in water.
6. Peel the skin of almonds and
slice it along with cashews. Rinse the raisins.
7. Powder the cardamom.
8. Add cashew, almonds and cardamom
to the boiling mixture.
9. Heat the mixture with stirring
occasionally until the kheer is thickened.
10. Keep scraping the sides of the
pan and keep adding milk at every interval.
11. After turning off the flame, just
add rinsed raisins.
12. Now that the kheer is ready, it
can be served hot or it can be refrigerated to serve it as a cold kheer.
